Chicken Meatballs with Peas and Potatoes

minutesThis has become a favorite of ours. It’s so easy to throw together and it does not require a lot of time.
Ingredients
- For the Meatballs
1/2 lb Ground Chicken
Handful fresh dill and mint, chopped
1 small red onion, finely chopped
Zest of 1 lemon
1 tbsp dijon mustard
1 tsp salt
1 tsp ground black pepper
1 tsp turmeric
1 tsp cumin
1 tsp Aleppo pepper
4 garlic cloves, crushed
1 tbsp tomato paste
1 tbsp date syrup
1 egg
5 tbsp olive oil (use good oil!)
1/4 cup breadcrumbs
- For the Pot
4 tbsp olive oil
1 tsp salt
1 tbsp turmeric
1/2 tbsp cumin
1 tsp black pepper
1 sweet onion, sliced thin
3 celery stalks, chopped with leaves
4 med Yukon gold potatoes, cut into chunks
1 pkg frozen petite peas
4 cups water
Directions
- Put all meatball ingredients into a bowl and mix by hand. Form into 30 meatballs (from 2 lbs of chicken).
- In a skillet over medium heat, add oil, salt, turmeric, pepper, and cumin. Cook for 1 minute until fragrant.
- Add onions, celery, and potatoes and cook for 1 minute.
- Add peas and 4 cups of water, cook for 10 minutes.
- Add meatballs in a single layer on top of mixture.
- Cook with the lid on for 50 minutes. You can broil for an additional few minutes if you want to get more browning on the meatballs.
