This has become a favorite of ours. It’s so easy to throw together and it does not require a lot of time.

Ingredients

  • For the Meatballs
  • 1/2 lb Ground Chicken

  • Handful fresh dill and mint, chopped

  • 1 small red onion, finely chopped

  • Zest of 1 lemon

  • 1 tbsp dijon mustard

  • 1 tsp salt

  • 1 tsp ground black pepper

  • 1 tsp turmeric

  • 1 tsp cumin

  • 1 tsp Aleppo pepper

  • 4 garlic cloves, crushed

  • 1 tbsp tomato paste

  • 1 tbsp date syrup

  • 1 egg

  • 5 tbsp olive oil (use good oil!)

  • 1/4 cup breadcrumbs

  • For the Pot
  • 4 tbsp olive oil

  • 1 tsp salt

  • 1 tbsp turmeric

  • 1/2 tbsp cumin

  • 1 tsp black pepper

  • 1 sweet onion, sliced thin

  • 3 celery stalks, chopped with leaves

  • 4 med Yukon gold potatoes, cut into chunks

  • 1 pkg frozen petite peas

  • 4 cups water

Directions

  • Put all meatball ingredients into a bowl and mix by hand. Form into 30 meatballs (from 2 lbs of chicken).
  • In a skillet over medium heat, add oil, salt, turmeric, pepper, and cumin. Cook for 1 minute until fragrant.
  • Add onions, celery, and potatoes and cook for 1 minute.
  • Add peas and 4 cups of water, cook for 10 minutes.
  • Add meatballs in a single layer on top of mixture.
  • Cook with the lid on for 50 minutes. You can broil for an additional few minutes if you want to get more browning on the meatballs.
